Baked Feta Heirloom Salad.

I just love heirloom tomatoes, they’re not only beautiful but flavorful & juicy. During last week’s trip to Whole Foods I was happy to see a wide variety of heirloom tomatoes available & couldn’t resist going home with some. Maybe it was eating at a Greek restaurant that day & having baked feta that sparked a massive craving for it again, or maybe I just love feta. Either way, I decided to combine two of my favorite ingredients to create this baked feta heirloom salad. The result was a healthy, satisfying salad that was ready in under 15 minutes. You’re going to love this salad!

Ingredients (makes 1 large serving)

Parchment paper

1/2 block feta cheese

1 handful fresh basil

1/2  tablespoon honey

1/2 tablespoon olive oil

Crushed black pepper, to taste

1 heirloom tomato

Sea salt, to taste

Preheat the oven to 350 degrees. On a cookie sheet, place piece of parchment paper & lay half of the basil leaves on it then place the block of Feta on top. Top the cheese with honey, olive oil, black pepper & remaining basil leaves. Fold the parchment paper over the feta to create a little pocket & bake for 15 minutes.


While the cheese bakes slice the tomato & place them on a plate with a generous sprinkle of salt. Once the feta is baked, drain the cheese (there will be some liquid in the parchment pocket). Crumble warm feta over the tomato & garnish with torn basil leaves & a drizzle of olive oil.  Simple, delicious & very satisfying. Buen provecho!
