Sun-Dried Bruschetta.

Who doesn’t love Bruschetta? Fresh, healthy & delicious, you really can’t go wrong with this simple appetizer. I like to make Bruschetta with sun-dried tomatoes, I call it Sun-Dried Bruschetta.


6 Plum Tomatoes, chopped

10 Sun-Dried Tomatoes, chopped

2-3 TBS Balsamic Vinegar, to taste

1 1/2 TBS Garlic, minced

1/4 Cup Olive Oil

Handful of Fresh Basil, finely chopped

Pinch of Salt & Pepper, to taste

Combine all ingredients & let marinade for at least 30 minutes before serving. Serve on toasted baguette pieces. To make them yourself, slice a french baguette & place on a cookie sheet. Brush top with olive oil & desired condiments (like italian seasoning or garlic powder). Broil for 3-5 minutes until top is golden brown & enjoy. Buen provecho!
