“Fried” Green Tomatoes.
April 25, 2012 by CarolinaA couple of months ago while in Savannah I had the best fried green tomatoes…crispy, delicious fried green tomatoes. I was craving said fried green tomatoes but I’m trying to stay away from fried foods so I decided to create my own version of these “fried” delicious treats. Katie is leaving Orlando this morning so last night we got together to share a meal before she left, & these “fried” green tomatoes made an appearance. They were crunchy, healthy & satisfying, can’t go wrong with that!
Ingredients (Makes 4 Servings)
2 Green Tomatoes, sliced in thick rounds (4 out of each tomato)
1 cup dried polenta
1/2 teaspoon paprika
1/2 teaspoon dried thyme
Pinch of salt & pepper
1 cup all-purpose flour
2 eggs, scrambled
Preheat oven to 400 degrees. In a plate, combine the polenta, paprika, thyme, salt & pepper. Place every ingredient in a separate dish, creating an assembly line in this order: green tomato, flour, egg whites, polenta mixture.
Grab a slice of green tomato & coat with flour on both sides, dip into the egg whites, then coat with polenta mixture. Repeat this process until all tomato slices are coated. Place on a cookie sheet & bake for 15 minutes, flip the tomatoes & drizzle with a little olive oil to bake for another 5 minutes (total cooking time is 20 minutes).

Serve with your favorite sauce or on top of a salad like I did, drizzled with a vinaigrette. Buen provecho!

Polenta gets crispy??? I’ve only ever seen it as a mushy grits-like deal. This might make me a polenta convert after all!

Polenta in it’s natural form looks a lot like flour, just a little coarser. It’s a great substitute for breading because it gets crispy, I’m a fan!

I’d never heard of fried green tomatoes until I moved down here. They’re so yummy!

Wowww that is SO cool! I’ve never heard of fried tomatoes! It sounds delicious even though I’m picky with fried foods (sensitive stomach)

Whole wheat flour would totally work, that’s what I would of used if I had it around but all purpose flour was all we had

Oh my! Those look soooo good! I’ve only had them a handful of times, but they’re so yummy. I’m loving the healthified version.
