Citrus Asparagus.

In the A Fancy Affair post I mentioned sharing my citrus asparagus recipe…here it is! I think you’ll be amazed about how simple & delicious it is.


1 Pack of Asparagus, ends trimmed

1 Large Orange, quartered

Orange Zest, from one of the quarters of your orange

1 TBS Olive Oil

Salt & Pepper, to taste

Zip-Lock bag

In a zip-lock bag, squeeze the orange quarters over the asparagus. Add the olive oil, salt & pepper, orange zest &  quarters into the bag & seal. Let it get happy while the oven pre-heats (the longer you let the asparagus marinade, the sweeter it’ll taste).

Place your pizza stone or cookie sheet in the oven as you pre-heat it to 400 degrees. Once the oven reaches the temperature, place asparagus on top of the hot stone & drizzle some of the juice over the stalks. Bake for 10 minutes, asparagus should be  cooked but al dente — absolutely perfect!

I served mine with roasted pecan & garlic bulgur/brown rice mix I love. Feel free to add the remaining marinade to the asparagus when serving. Buen provecho!
