Thyme Summer Squash.

Thyme Summer Squash

You know those dishes you can make with your eyes closed? I have a few of these, so easy to me I never think of posting the recipe…that is until now. I had someone over for dinner last week who loved my Thyme Summer Squash, one of my go to side dishes. I promised I would post the recipe so here we are. I love Thyme Summer Squash for an array of reasons: For starters, it’s super healthy & easy to make. It goes well with anything & everything, has a real fresh taste to it & is vegan — winning all around.

Ingredients (makes 4 side servings)

2 tablespoons olive oil

1/2 tablespoon garlic

6 fresh thyme stems

6 small summer squash, diced on the bias

1 tablespoon lemon juice

Salt, to taste

Lemon pepper, to taste

Over high heat, heat olive oil, garlic & thyme stems. Add the summer squash & lemon juice & lower heat to medidum high. Add salt & lemon pepper, cook for 5 minutes until squash is tender & slightly golden brown. Buen provecho!
