It’s amazing how much my palate’s changed since I became a vegetarian. For example, I hated mushrooms before & now I can’t get enough of them, especially shiitake mushrooms — I love the way they taste!
They’re a “meatier” mushroom & I was craving Mexican so I decided to make Shiitake Fajitas. Like Katie, I love me some Mexican. Tacos, burritos, guacamole, you name it I love it. On top of the list though are delicious fajitas with all the fixings!
1 Package Shiitake Mushrooms, cut into strips
1 White Onion, cut into strips
1 Green Pepper, cut into strips
1 Red Pepper, cut into strips
2 TBS Sofrito
1 Garlic Clove, minced
1 1/2 TSP Adobo
1 TBS Oil (I used Canola)
Tortillas or Lettuce Leaves
Your Favorite Toppings (I used Black Beans & Cilantro but go crazy using salsa, avocado, sour cream, cheese)
In a skillet, heat the oil & add the mushrooms, onions, peppers, sofrito garlic & adobo; cook for 7 – 10 minutes until all ingredients are tender — that’s it!
Assemble the fajitas with your favorite toppings — it doesn’t get much easier than that right? Delicious & ready in no time….
