Tofu gets a bad rep. The minute someone says tofu most people think it’s bland & boring, am I right? I will admit, I’m not a huge tofu fan but when I do have it I really enjoy it. The great thing about tofu is its ability to absorb any flavors you marinate it with; it can be quite delicious. Don’t believe me? Give this recipe a try & you’ll be a tofu convert, guaranteed. This roasted tofu with balsamic marinade is super easy to make, it’s gluten free, vegan & very flavorful. Let’s get started!
Ingredients (makes 6 slices)
1 block extra firm tofu, drained
3/8 cup balsamic vinegar
1 tablespoon grainy dijon mustard
1 teaspoon dried parsley
They key to making good tofu is to drain it properly so let’s start there. Remove the tofu from packaging, drain all the water & wrap tofu with a few paper towels then place on a flat surface (like a cutting board of a plate). Place a couple of heavy plates on top of it & let the tofu sit for at least 20 minutes to remove all the water. Cut block into 6 slices & place in a dish.
In a small bowl or cup, combine the marinade ingredients: balsamic vinegar, mustard & dried parsley, whisk together until fully combined. Pour the marinade over tofu slices & let it sit for 20 – 30 minutes. About five minutes before tofu is ready preheat oven to 350 degrees. Once the tofu is fully marinated transfer the slices onto a parchment lined cookie sheet for baking.
Bake tofu slices at 350 for 50 minutes until tofu is brown & firm, remove from heat & enjoy! Oven roasted tofu with balsamic marinade is great hot or cold, all on its own or chopped into a salad. Buen provecho!
