Mushroom Texmati Rice Pilaf.

 Who doesn’t love rice right? It’s delicious, nutritious & the perfect canvas for any meal. Naturally, when DailyBuzz  & RiceSelect gave me the opportunity to try RiceSelect’s Texmati Rice Blend, I was really excited. Growing up with rice as a staple in our family (I am Latina after all), I’m a firm believer that rice elevates any & every meal. I was excited to try RiceSelect’s Texmati Royal Blend because it’s quick cooking & contains a mix of white, brown, wild & red rice — it’s like a rice party! I decided to host some friends to share my rice pilaf recipe, made even better with RiceSelect.

Rice pilaf is a great main dish, you can incorporate your favorite ingredients & deliver an unforgettable dinner. I’ve tried several combinations for rice pilaf before but this one is by far my favorite. The white mushrooms make it hearty, the cashews add a nutty taste & the rice literally melts in your mouth. After trying this rice, I have a feeling I won’t be able to stop eating it, it’s that good I promise. Plus, this recipe is easy to make, it’s vegan, gluten free & healthy — that’s a quadruple threat if you’re keeping track. Are you ready to get cooking? Let’s make some incredible rice together!

Ingredients (makes 4 servings)

2 tablespoons olive oil

3/4 cup RiceSelect Texmati Royal Blend

1 cup white mushrooms, chopped

1/2 cup white onion, chopped

1/4 cup celery, chopped

2 cups vegetable broth

2 tablespoons Italian parsley, finely chopped

1/2 cup cashews, chopped

1/4 teaspoon garlic powder

1/8 teaspoon cumin

1/4 teaspoon black pepper

1/4 teaspoon salt

In a skillet, heat oil over medium heat & saute the RiceSelect Texmati Royal Blend, mushrooms, onion & celery until lightly browned. Mix in cashews, garlic powder, salt & pepper then add vegetable broth & bring to a boil. Cover skillet & reduce heat to low, simmer rice for 13 – 15 minutes until broth is absorbed & rice is tender. Remove from heat & let stand for a few minutes before serving.

Go ahead & give the rice a try — are you swooning yet? The white, brow, wild & red rice make this the best rice pilaf you & your dinner guests will ever have! I served the rice pilaf with a seasonal beet salad (stay tuned for that recipe later this week!), broiled rosemary asparagus & delicious California wine. The meal was a hit; my dinner guests ate every single grain of rice. I will definitely be making this recipe again (this dish is perfect for Thanksgiving!) & am excited to continue to make incredible rice dishes with RiceSelect Texmati Rice Royal Blend.
