Spanish Gazpacho.
August 24, 2012 by CarolinaSometimes I feel like I live in the center of the sun — it’s so ridiculously hot in Florida this time of year! When it’s this warm & sticky I’m always thinking of refreshing/cooling foods to eat, like gazpacho. Gazpacho is a traditionally Spanish tomato-based cold soup. Nowadays, you can find all kinds of gazpacho on restaurant menus (watermelon, cucumber & strawberry to name a few) but the traditional dish has three main ingredients: tomato, red pepper, cucumber…it’s that simple. That’s the great thing about gazpacho, it’s super easy to make plus it’s vegan, healthy & absolutely delicious!
Ingredients (makes 2 servings)
5 medium tomatoes, seeded & chopped
1 large red sweet pepper, seeded & chopped
1 medium cucumber, peeled & chopped
1 tablespoon garlic, chopped
2 tablespoon fresh dill
1 teaspoon olive oil
2 teaspoons red wine vinegar
1 teaspoon onion powder
1 teaspoon cumin
1 teaspoon paprika
1 teaspoon coriander seeds
Juice of 1 lemon
In a food processor or blender combine most (leave some for garnish at the end) tomatoes, pepper, cucumber, garlic, dill, oil, lemon & seasonings; blend until smooth. Serve in a bowl, top with some of the remaining tomatoes, pepper & cucumber pieces & you’re done!
You can enjoy all on its own or with a crouton, which is how I served mine. I toasted pieces of baguette topped with goat cheese & served these alongside the gazpacho for dipping. Buen provecho!
