Crockpot Chili.

My husband and I arrived in the States earlier this week. It’s summer in South Africa, so coming home to 20+ inches of snow was a bit of a shock.

But, it’s been so much fun to spend time with family. We’re playing board games like it’s our job.

There’s something about chili and cold weather that just go together. Earlier this week, I took what my mom had in her cupboard and made some chili in the crockpot.

Ingredients

1 can pinto beans
1 can kidney beans
1 can black beans
1 can tomato soup
1 small can tomato paste
2 onions chopped
5 mushrooms-sliced
3 garlic cloves
olive oil to saute
1 can of corn
2 tbsp chili powder

Directions

Because I used what my mom had in her cupboard the ingredients are a bit different than what I would sometimes use for chili, but it worked!

Saute onions, garlic and mushrooms in olive oil. When onions are clear (about 5 minutes), put the mixture in the crockpot. Add beans, tomato soup, tomato paste and corn. Mix with wooden spoon and add chili powder to taste.

Heat and enjoy!
