Skillet Lasagna.
October 18, 2011 by KatieI don’t use the boxed meals like Hamburger Helper. Partially because I don’t eat hamburger, also because they don’t sell them in South Africa (the alternatives are pretty expensive). But, mostly because of the preservatives.
This is a great healthy alternative, made with real food and just as quick as the boxed variety!
Ingredients
2 Tbsp olive oil
4 cloves garlic
3 oz. tomato paste
1 (15 oz.) can diced tomatoes
1/2 Tbsp Italian Seasoning
1/2 cup water
8 oz. pasta
8 oz. creamy cottage cheese or ricotta cheese
1 egg
to taste salt and pepper
1 cup shredded mozzarella
1/2 cup chopped tomatoes (optional)
Directions
Mince garlic and cook it with olive oil over medium heat until softened. Add tomato paste, tomatoes, italian seasoning and water to skillet. Allow to simmer, then reduce heat to low.
Cook pasta according to directions and drain.
Add pasta to sauce.
Combine cottage cheese (or ricotta) and egg. Drop mixture on top of pasta mixture by spoonfuls. Sprinkle shredded mozzarella over the top and cover to allow cheese to melt. You can top with some fresh tomatoes if you’d like.

Yummy! I usually sub cottage cheese for ricotta in my lasagna too.
