Cucumber Sandwiches.
September 17, 2012 by CarolinaAbout a month ago I had some delicious cucumber sandwiches at afternoon tea & I’ve been dreaming of them ever since. Cucumber sandwiches are pretty straight forward, so why would I share a recipe with you all for them? Because of the spread — it’s all about the spread! I’ve made cucumber sandwiches a dozen times but this was the first time I experimented with the spread component of them & it made a huge difference. I couldn’t eat these fast enough!
Ingredients (8 small sandwiches)
1/2 large cucumber, peeled & vertically diced
4 slices of your favorite bread (I used ciabatta)
2 tablespoon vegenaise
1 teaspoon dijon mustard
1 teaspoon lemon juice
1 teaspoon fresh thyme
Salt & pepper, to taste
In a container (I like mixing this in a tupperwear container cause if you have any leftover it’s already ready to store) combine the veganaise, lemon juice, mustard, thyme, salt & pepper & fully integrate — so simple! You now have the dressing & are ready to assemble.
The assembly should go: bread, dressing, cucumber, dressing, bread. Cut off the crusts then cut into 4 squares.
I enjoyed these with delicious darjeeling tea, outside in the cool crisp air — it was lovely. Hope you enjoy these as much as I did. Buen provecho!
