Summer Radish Salad.

I went to the farmers market last weekend & picked up gorgeous radishes. I had never bough radishes before so I was excited to prepare them. After looking around for recipes I stumbled upon one in The Kind Diet & decided to modify it — it was incredible! I had it hot, I had it cold, it tastes good either way. This salad is refreshing, filling & perfect for the summer time!

Ingredients

1 Bunch Fresh Radishes (about 10), thinly sliced

1 Cup Edamame, shelled

2 1/2 Cups Sugar Snap Peas

2 TBS Scallions, chopped

1 Lemon, zested & juiced

1 TBS Olive Oil

1/4 TSP Dried Basil

1/4 TSP Garlic Powder

1/4 TSP Lemon Pepper

1/2 TSP White Wine Vinegar

Radish leaves, for garnish

Sea Salt, to taste

In a pot, boil salted water; add the radishes, sugar snap peas & edamame & bring to a boil. Cook for a couple of minutes, remove from heat & drain.

In a skillet, heat olive oil, scallions, garlic powder & basil; cook for a couple of minutes until scallions are fragrant. Add the radish/peas/edamame, white wine vinegar, lemon pepper, lemon zest, lemon juice, salt & cook for an additional couple of minutes.

Top with radish leaves or your favorite herb for a hint of freshness. You’re going to love this salad. Buen provecho!
