Grilled Peach Delight.
August 30, 2010 by CarolinaI recently discovered a small produce shop filled with seasonal goodies. Currently in season: succulent peaches! When I think of peaches I immediately think of summer (even though I live in season-less Florida). Here’s a taste of summer delight.
Grilled Peach Salad
2 Peaches, sliced
Romaine Lettuce, loosely chopped
Almonds, handful, sliced
Honey Mustard Vinaigrette (recipe below)
Cut peaches in half, remove the pit and slice. Brush slices with olive oil, lightly salt & place them on the grill. Grill them for 3 – 5 minutes (until you get the grill marks), turn, repeat. Place grilled peaches on top of bed of lettuce. Sprinkle the almonds & drizzle the vinaigrette to taste.
Honey Mustard Vinaigrette Dressing
2 TBS Honey Mustard
2 TBS Honey (You can go lighter, I just like it extra sweet)
1/8 Cup Apple Cider Vinegar
1 Garlic clove, finely minced
1/4 Olive Oil
In a bowl, whisk mustard, apple cider vinegar, honey and minced garlic. Slowly add the olive oil, whisking as you pour. Whisk for about a minute, salt & pepper to taste.
You will have leftover dressing, which you can use for future salads or as a marinade (try it on asparagus). Buen provecho!
