Green Bean Salad.
December 10, 2010 by CarolinaWho says a salad has to have lettuce? I’ve been eating a lot of salads lately & decided to mix it up a bit by using green beans as the base instead of lettuce. After purchasing beautiful organic produce & smoked mozzarella this salad was born. This was my first time trying smoked mozzarella & I’ve got to say, I really liked it. The smokeyness was a nice touch without overpowering the cheese. Lets get cooking!
Ingredients
1 Bag of Green Beans, cooked
1 Small Tomato, chopped
1/2 Small White Onion, chopped
1 TBS Garlic, minced
1/4 Cup Apple Cider Vinegar
2 TBS Sesame Oil (you can also use Olive Oil)
3 Slices Fresh Smoked Mozzarella, diced
Fresh ground pepper, to taste
Sea Salt, to taste
In a pan, bring water to boil & follow green bean package instructions. Drain green beans & place back in the pan. Add the tomato, onion, garlic, apple cider vinegar, oil, salt & pepper & toss. Top with smoked mozzarella.
