Chopped Greek Salad.

Let’s face it, when we think of salad most of us think boring. Lettuce, veggies & some dressing from the store isn’t necessarily exciting. But here’s the thing, salad doesn’t have to be boring at all, with the right ingredients salad can be both delicious & very satisfying. I love having salads, especially for dinner, they fill me up but don’t make me feel heavy afterwards. I like to try different combinations but have some I love so much I have them regularly, chopped Greek salad is one of them.

I love Greek flavors, typically have the ingredients at my house & it’s ready in minutes. Plus, the creamy parsley dressing I make for this salad is to die for. It’s rich without being bad for you. Most salad dressings you buy at the store are full of sugar & preservatives, things you don’t want in your body. This parsley dressing, made with all-natural Healthy Greek Eats yogurt, will make you want to never buy chain dressings again. Who says healthy can’t be delicious? That’s a rumor, don’t believe it. Healthy Greek Eats yogurt is the perfect base for this dressing, it’s rich & smooth, perfect for this creamy parsley dressing. The dressing is great in salads & even as a dip, trust me, you’re going to love it. Let’s make some salad!

Ingredients (makes about 4 servings)

1 cup loosely packed fresh parsley

1/2 cup Healthy Greek Eats Greek Yogurt

2 tablespoons lemon juice

Zest of 1 lemon

1/2 tablespoon garlic, minced

1/4 cup extra virgin olive oil

Salt & pepper, to taste

1 head of romaine lettuce, chopped

10 – 12 cherry tomatoes, chopped

1 red pepper, chopped

1 small cucumber, chopped

In a food processor or blender blend the parsley, Healthy Greek Eats Greek yogurt, lemon juice, zest, garlic, olive oil & a little bit of salt & pepper. This is your dressing, give it a taste. Is this salad off to a terrific start or what? Add as much creamy parsley dressing to your vegetables as you’d like. For this particular salad I dressed lettuce, tomato, red peppers & cucumbers with this delicious dressing but feel free to experiment: olives, mushrooms, feta cheese would also be great in this. Toss your vegetables until fully covered in dressing & serve. Buen provecho!
