Quick & Easy: Vegetarian Meals.

So, I’ve written a lot lately about needing quick ideas for week nights. Working at home, I was able to spend time prepping through the day and without a commute, could spend longer making dinner. These days, when I get home at 6:30, I’m starving–so I don’t want to wait until 8 to eat.

I’ve been scouring Pinterest for new ideas. My criteria includes: easy, quick, good leftovers, good for lunches, etc. Basically, I want recipes that will make enough for leftovers we can use for lunches or dinner later in the week.

Here are some of my inspiration recipes for next week (keep in mind, not all are actually vegetarian–I will, of course, make a vegetarian version):

Tortellini and Garden Vegetable Bake

Minus the chicken, of course–looks pretty thought, huh?!

Whole Foods Turkish Red Lentil Soup

Gingered Blueberry Shortcake

So, this might not be a dinner–but it looks seriously tasty!

Taco Casserole

Really quick–and easy to omit the beef (or use vegetarian version)

Shrimp, Eggplant + Zucchini Spaghetti (squash) Recipe

minus the Shrimp 🙂

Creamless Corn Chowder

One of the fun things about being vegetarian is needing to be a little more creative in the kitchen. I don’t have many vegetarian cookbooks–typically, I just recreate dishes using vegetarian ingredients.
