If you enjoyed the Sweet Spaghetti Squash just wait until you try it Savory! I eat this all the time, it’s simple & takes no time to make yet is full of flavor. I’m not a big fan of pre-made pasta sauces, I always create my own. The goal being great tasting toppings with little to no artificial stuff. This topping/sauce is my standard one, but I’ll be sharing with you all kinds very soon. Now onto the Savory Spaghetti Squash, trust me, you won’t miss the carbs on this dish!
Savory (2 servings)
2 Cups Spaghetti Squash, cooked
1 Large Tomato, chopped
1 Medium Shallot, chopped (you can use scallions too)
1 Clove of Garlic, finely chopped
1 TBS Sesame Oil (you use your favorite oil)
1/2 TSP Red Pepper Flakes (add more if you want more heat)
Handful of Herbs, finely chopped (I had parsley, basil & thyme on-hand so that’s what I used)
Handful of Cheese (I used parmesan)
In a skillet, pour sesame oil over medium heat. Add the garlic & shallots & cook for a minute. Add the tomato, red pepper flakes & your favorite seasonings (I used salt & pepper) then toss & cook for 2-3 minutes. If you have mushrooms on-hand add them, they’re great with spaghetti squash. Pour the mixture over hot spaghetti squash, top with herbs & cheese. This makes a great meal all on its own.
As you can see, spaghetti squash can be topped with just about anything. Give it a try, you’ll be a fan in no time. Buen provecho!
