Orzo a la Primavera.
October 7, 2010 by CarolinaI’m lucky to have a great group of girlfriends who are vegetarian & love to cook. We recently instituted a monthly gathering to share meals together, trade recipes & celebrate life. In our last get together we all cooked this orzo dish & it was a huge hit. How can you go wrong with orzo? The answer is you can’t. So good!
Ingredients (4 servings)
1 Cup of Orzo
1 Garlic Clove, finely chopped
1 Medium Zucchini, shredded
1 Medium Carrot, shredded
14 oz Vegetable Broth (one can)
1 Lemon, zested
1 TBS Fresh Thyme, finely chopped
1 TBS Olive Oil
Parmesan Cheese, graded or shredded, to taste
In a pot, heat olive oil over medium heat. Stir in orzo & cook for 2-3 minutes, until orzo is slightly golden. Stir in the carrot, zucchini, lemon zest & garlic & cook for 2-3 minutes. Pour in the vegetable broth & bring to a boil. Reduce heat to low, simmer for 10-12 minutes (orzo will be tender, broth will be absorbed). Season with a little salt, pepper & top with fresh thyme & parmesan cheese. Buen provecho!
