Mediterranean Gnocchi.

My favorite way to cook is to make things up — I like to go through the cupboard & see what I can whip up. I had a few ingredients left from the Ultimate Tailgate Hummus Dip that I decided to use for a delicious mediterranean gnocchi meal — boy am I glad I did! Pair this meal with a good wine & you’ve got a great dinner in the making.
Ingredients
1 Package of Gnocchi
10 Sundried Tomatoes, chopped
10 Olives, finely chopped
1 Jar Artichoke Hearts, chopped
1/2 Jar Organic Marinara Sauce
1 Cup Shredded Three Cheese Mix (Feta would be great in this as well)
Handful Fresh Parsley, chopped
In a pot, bring water to boil & cook your store bought or homemade gnocchi (shouldn’t take longer than 3-5 minutes). Drain gnocchi & place back in the same pot.
Add the sundried tomatoes, artichoke hearts, olives, marinara sauce, cheese & toss. Top with fresh parsley to taste. I served mine with a simple cucumber, tomato & spinach salad — it was the perfect mediterranean treat. Buen provecho!
