Lemon Cilantro Penne.

I need fuel for Saturday’s big race & have a paper that’s due this weekend: I have no time to eat out or cook for long. I decide to make a go-to dish that’s simple, delicious & can help me carb load for a long run. I look at my ingredients & am happy to discover my favorite: Cilantro. Confession: I think cilantro can make everything taste better. Eggs, salads, sandwiches, soups — you name it, cilantro brings it up a notch. You know what also brings things up a notch? This penne pasta! It’s easy to make & goes with almost anything. This will be a great meal right in preparation for 9 long miles.


1/2 Pack of Penne Pasta

Handful of Cilantro, finely chopped

1 Lemon, zested

1/2 TBS Olive Oil

Lemon Pepper, to taste

Sea Salt, to taste

In a pan, bring water to boil & cook pasta according to package instructions (typically 6-8 minutes). Drain pasta, place back in the same pan. Add cilantro, the zest of the lemon, olive oil, lemon pepper, sea salt & squeeze the lemon juice onto the pasta & toss.

And you’re done! Easiest meal ever. I like it all on its own but I paired it with a side of frozen lima beans for some protein. 

Tomorrow’s the big race, what should a girl eat tonight? Decisions, decisions!
