Lazy Day Pasta.

There are some days that get away from me. I’m sure that happens to you too…you look at the clock and realize you have to be somewhere in an hour and you haven’t made dinner and you have to get ready, and, and, and…
This is my favorite recipe for that.
It’s super easy, and relatively healthy. Bonus, right?
And actually, my husband requests this a lot. Actually, every week when I’m meal planning he requests it. Love that he loves the easy stuff!
Ingredients
3 cups of mixed veggies, chopped (I usually use: eggplant, carrots, tomato and red onion)
2 tbsp olive oil
2 Tbsps of greek dressing
Pasta
1/4 cup of feta cheese (you can use crumbled, I use Danish feta–it’s a bit softer)
Directions
Preheat the oven to 350 degrees. Toss the veggies with olive oil and add greek dressing. Cook for 15 minutes, or until tender.
In the meantime, cook the pasta.
Toss the veggies with the pasta and feta.
Enjoy!

Everyday is lazy cooking day for me…it certainly doesnt seem like a lazy meal..it looks delish!
