Hatch, our department’s designated party planner, planned a great lunch themed as the Ultimate Tailgate. We were each to wear our favorite team shirts & bring something for the tailgate. I of course rocked my FSU shirt — Go Noles! I decided to make Donna’s delicious Hummus Dip (she made it for the Food & Wine Fest & was kind enough to give me her recipe). I made a few modifications & the end result was stellar! Check out the Ultimate Tailgate Hummus Dip.
1/2 Cup Tahini (Sesame Paste)
4 Cups Canned Chick Peas
1/3 Cup Warm Water
1/3 Cup Olive Oil
1 & 1/2 Lemons, juiced
Cumin, to taste
Garlic, minced, to taste
1 Large Tomato, chopped
1/2 Large Cucumber, chopped
8 – 12 Kalamata Olives, chopped
4 – 6 Sundried Tomatoes, chopped
Feta Cheese, crumbled, to taste
Tabasco Sauce, to taste
To make the hummus, combine the tahini, chick peas, water, olive oil & juice of 1 lemon (save a bit for later) in a blender. As you’re blending, add the cumin & garlic cloves; blend until hummus consistency. Make sure to taste & adjust seasonings, then spread in a pan.
Top hummus with tomatoes, cucumbers, olives, sundried tomatoes & feta. Drizzle leftover lemon juice, a bit of tabasco sauce & the a dash of the oil from the sundried tomatoes. Opa! This delicious greek dip is a big hit!

After having an awesome lunch we proceeded to play soda pong & flip cup, office style, which meant no alcohol. I’m proud to announce my team won the flip cup challenge — yea, we still got it!
