Every year my old roommates & I get together to celebrate Thanksgiving with each other (Roomsgiving if you will). This is the 5th year we host a large dinner for everyone of our old roommates & a guest; this year our table was 22 people strong! We each contribute to the meal, often times cooking together, it’s a very fun, special night for all of us. Last year I made stuffed mushrooms & this year I decided to contribute one of my favorite appetizers, a creamy spinach artichoke dip. I’m going to be honest, spinach artichoke dip isn’t necessarily the healthiest but boy is it delicious! Both Katie & I believe a healthy lifestyle involves indulgences here & there, this dip is just that, a delicious indulgence. That said, I tried to make it as figure friendly as possible & it tasted fantastic.Â Make it the next time you have company & watch everyone swoon as they take a bite.
Ingredients (makes 1 large dip)
1 cup fat free mozzarella, shredded
1 cup parmesan cheese, shredded
8 oz fat free cream cheese
10 – 12 oz alfredo sauce
2 cloves garlic, minced
2 cans artichoke hearts, quartered
4 cups baby spinach, chopped
Favorite bread/crackers for dipping
Preheat oven 350. In a baking dish combine all ingredients & bake for 30 minutes. I chose to serve mine on a bread bowl (used the inside of the bread for dipping) but you can serve it on the baking dish itself. Sprinkle the dip with a little more parmesan cheese for extra creaminess. Buen provecho!
