Lemon Bars

My aunt sent me this recipe a couple weeks ago. My Mr. and I finished off a pan in 24 hours, so obviously throughly enjoyed them!
I know it’s a little past BBQ season in America, but Braai season is just starting up for us in South Africa. This is a quick and easy dessert to throw together to bring to gatherings–I usually have all the ingredients on hand too. Definitely a plus!


1/2 c. real butter (I used a vegan substitute and it worked fine!)
1/4 c. powdered sugar
1 c. flour
1/8 tsp. salt

Mix and press in to a greased 8 x 8 pan. Bake at 350 for 20 min. While this is baking, mix:

1 c. sugar
2 lg eggs
1/4 c. lemon juice
2 Tbl. flour

Mix. Pour the lemon mixture on top of the crust and bake for another 20 min. Let cool and cut in to squares. Sprinkle powdered sugar on top and serve.
