Banana Melt.
May 21, 2012 by CarolinaI love bananas, always have, always will. One of my favorite pre or post race treats to enjoy is a banana, it’s high in potassium & always hits the spot. Yesterday my mom gave me the most beautiful bananas & I just had to have one before the day was up. Rather than just eat it raw I thought, what if I integrate it into my meal? I knew I wanted waffles & had chocolate chips in the cupboard…& then it hit me — let’s bake the banana! I wasn’t sure if this was going to work or not so I did a little search, stumbled across this recipe & was immediately sold!
I don’t eat marshmellows (though I’m not vegan I don’t have gelatin) so I kept it simple, just banana & chocolate chips. The result was the perfect sweet treat to enjoy in an array of ways: all on its own, with ice cream (my favorite) or whipped cream, topped with your favorite nut butter (mine is almond) or with your favorite breakfast items; I went with the latter. Let me introduce you to the banana melt.
Ingredients (Makes 1 Melt)
1 banana, peeled
1 tablespoon mini chocolate chips
Aluminum foil
Preheat oven to 400 degrees. Once the oven is warm, peel the banana. Make a slit in the middle of the banana & place on aluminum foil. Stuff the banana with chocolate chips & wrap the banana in the foil (I made a little pouch by pinching the corners together on top).
Bake for 7 – 8 minutes until chocolate chips are melted & you’re done! I had my banana melt with a whole wheat waffle, syrup & fresh strawberries — it was AMAZING! I’m excited to try different combinations like butterscotch chips, caramel, apples…the possibilities are endless. Buen provecho!

So simple, but it sounds delicious – I love it!! Gelatin isn’t vegetarian, it’s interesting that people think it’s a vegan thing. =) I get vegan marshmellows though, which taste exactly the same – you can usually find them at Whole Foods or online.
