Crunch Wrap Supreme.

My pretty amazing husband loves Taco Bell. I’m not sure I’d ever eaten there until we met. Seriously.

But, now it’s a routine stop when we’re in America. So, we decided we had to master it at home. Vegetarian style, of course.

I took homemade black bean burgers and cut them into small pieces, heated them in a pan and added taco seasoning and a bit of water.

And used homemade tortillas. These were actually really tasty–kuddos to the hubs for the idea!

Crunch Wrap Supreme

6 tortillas
3 black bean burgers
Taco seasoning packet
1 cup cheddar cheese, grated
1 green pepper
1 tomato
Handful of lettuce
Sour cream, to garnish
1 avocado
Vegetable oil

Heat a small frying pan on the stove with a tsp or so of oil. Add chopped veggie burgers, cook until heated through. Add taco season (follow directions for amount of water to use)

In the meantime, heat a pan with a bit of vegetable oil (1/4 cup or so) and fry 1/2 of the tortillas to make them crunchy.

Assemble by putting one non-fried tortilla on a plate, top with black bean mixture. Top with other tortilla and the rest of the toppings.

I thought it was better than the Taco Bell version!

Also, the bottom tortilla actually wraps around the whole thing in the Taco Bell version–our tortillas weren’t big enough for that, but if you have bigger ones, it would be even more Taco Bell-ish! Enjoy!
