Every year at work we have a massive cookie exchange & every year I ask myself: What am I going to make that’s unique & delicious? Last year I made Rasberry Coconut Cookies, the year before thatÂ Lemon RicottaÂ CookiesÂ and this year I decided to not do a cookie but make a biscotti instead, Nutella biscotti to be exact. I always find myself enjoying the wonderful flavored coffee & teas during the holiday season & there’s nothing better to enjoy with a hot cup of joe than a delicious biscotti. Especially if its made with delicious Nutella, because seriously, there’s no way to go wrong when Nutella is involved! I found this recipe & went with it, so glad I did. These are tasty!
Ingredients (makes about 2 dozen)
2 1/4 cups all purpose flour
2 tbsp cocoa powder
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup white sugar
1/2 cup Nutella
1/2 cup chocolate chips
Preheat oven to 350 degrees. In a bowl, sift together flour, cocoa, baking powder, baking soda, salt & set aside.
In large bowl, beat the eggs & sugar together until fully combined using a mixer for about 2 minutes. Stir in Nutella & fully integrate. Add flour mixture to egg mixture & mix until fully combined. Stir in chocolate chips & mix; your dough is now ready.
Divide dough into 2 or 3 logs withÂ flouredÂ hands to prevent sticking & arrange on parchment lined baking sheet. Press logs down to approximate 1/2 inch thick and bake for 20 minutes. Remove from logs from oven & turn down oven to 300 degrees.
Cut logs into 1/2 inch slices using a serrated knife, arrange on baking sheet & return to the oven; bake for 10 minutes. Turn biscotti over and bake an additional 10 minutes. Remove from oven & let cool.
