Pomegranate Mimosas.

Sometimes, when I’m at the grocery store, I walk away with things I did not expect to pick up. Whether its a new product or beautiful produce, the purchases I sometime make on a whim usually yield great results.┬áLast week, as I was picking up ingredients for my family’s Thanksgiving feast I noticed a stash of beautiful pomegranates & just had to pick them up — I immediately knew I wanted to use them for a cocktail to share with my family. Luckily for me, I had a bottle of chilled Freixenet in the refrigerator — enter Pomegranate Mimosas! This twist on a classic is the perfect mix of sweet decadence. It’s light, refreshing, perfect to enjoy with your loved ones over brunch or right before a meal. You’re going to love these!

Ingredients (makes 4 – 6 mimosas)

1 bottle Freixenet

16 ounces fresh pomegranate juice (about 2 cups)

Pomegranate seeds to garnish

Start by removing the pomegranate seeds & blending them to make a juice, don’t forget to but the juice through the strainer to catch seed remnants. In a pitcher, mix pomegranate juice & Freixenet. I like my mimosas on the sweet side but if you prefer them a little tart add a splash of orange juice.

For an extra touch of fun, rim glasses with white sugar before serving the pomegranate mimosas & enjoy! Are you a sparkling wine or champagne drinker? What’s your favorite cocktail?
