I LOVE breakfast food. This is one of my favorite quick breakfast meals (although, it’s good anytime of the day…).
3 eggs gently whisked
2 Tbsp milk
1 chopped onion
1 chopped tomato
1 slab feta
Saute onion and mushrooms in a bit of oil, put in a separate bowl. Add whisked eggs and milk to saute pan and mix. Cook for a couple of minutes, when eggs are starting to harden (there is probably a better word for this–if you can think of one, leave it in the comments and I’ll update the post!), add the sauteed veggies.
Cook fora minute longer and add the tomatoes and feta.
When the eggs are almost to your desired consistency–remove from heat and put on a serving platter or plate. (Eggs continue to cook after they’ve been removed from the heat).
Top with crumbled feta and serve.
Serves 2. (or one hearty eater…).
Best served with a latte on the porch.
