Brekkie Pizza.
October 18, 2010 by CarolinaHave you noticed the Great Reads links on the right? Those are some of the blogs we read & love. Among them is Kitchen of a Runner, which inspired me to try out this dish. I’m glad I did because it’s incredible! You should try this Brekkie Pizza.
Ingredients
Pizza Crust (make your own or buy pre-made. I like Whole Foods’ Rustic Organic Crust)
Marinara Sauce, to taste
Shredded Cheese, to taste (I use Whole Foods’ 3-Cheese Blend)
1/2 Medium Orange Bell Pepper, chopped
Portabello Mushrooms, chopped, to taste
1 Small Scallion, diced
Olive Oil, drizzle
3 Eggs
Your Favorite Seasonings
Preheat your oven to 450 degrees. Place pizza dough on stone & spread marinara sauce. Top with cheese, peppers, mushrooms, scallions & favorite seasonings (I used garlic powder, pepper & oregano). Drizzle with a little olive oil.
Crack the eggs on the pizza & salt the eggs. Bake in the oven for 10 – 12 minutes, until whites are set.
Try not to overcook the yolk so you can enjoy its runny goodness on the pizza. If you like to dip your bread in egg yolks you will love this pizza. So good! Buen provecho.
