Quinoa Bowl.

I just moved into a new place & finally broke in my kitchen! I invited friends over for lunch & made Quinoa Bowls for them — so good! Think Chipotle Burrito Bowls but with quinoa as the base instead & your favorite toppings. This is a quick & delicious meal everyone’s sure to love. I will be making this again…& again…& again!

Ingredients (makes 5 servings)

5 Cups Quinoa

1 Can Black Beans

1 Cucumber, diced

3 Roma Tomatoes, diced

3 Carrots, diced

Handful of Spinach, chopped

Feta Cheese, to taste

Salt & Pepper, to taste

Your Favorite Dressing (you can make your own)

Quinoa is a grain that comes in many varieties. It is not corn based so it’s safe for anyone with a corn allergy. Healthy, light & very easy to make, quinoa makes a great substitute for rice in almost any dish. Though I typically make red quinoa my friends brought a cilantro quinoa (regular quinoa w/ a packet of cilantro seasoning) so that’s what we used for the base. Regular quinoa or red quinoa will work just fine though. Cook quinoa according to package instructions & set aside.

Scoop the quinoa onto your plate & top with all the toppings, finishing your bowl with the dressing — and there you go! Healthier & more tasty than Chipotle, and that’s a tall order cause I love Chipotle. Hope you enjoy it. Buen provecho!
