Black Beans & Rice…& Rock Climbing.
October 12, 2010 by CarolinaA few weeks ago someone asked what our favorite meal is, I’m about to share the recipe for mine. Though I go through spurts, this meal remains one of my faves, I crave it often: Black Beans & Spanish Rice. I take a few short cuts for the sake of saving time; this meal is fast & delicious.
Ingredients
1 Pack of Spanish Rice
1 Can Black Beans
1 Medium Green Pepper, chopped
2 TBS Garlic, minced
1 TSP Oregano
1 Bay Leaf
1 TBS Olive Oil
Start by making the rice according to the package instructions. There are a lot of options out there but I’m a big fan of Vigo Spanish Rice. While the rice is cooking, heat olive oil in a deep skillet. Add the peppers & garlic, cook for a couple of minutes. Add the beans, oregano & bay leaf and cook for 5 minutes. Remove from heat & discard bay leaf.
Most times I eat this alone, but since I had guacamole around I topped the black beans & rice with it — so good! Buen provecho!
After eating, I headed to Aiguille Rock Climbing Gym for a fun work out with friends. We began by taking a class to learn how to knot our ropes & belaying, then we were off to our first wall. Hatch climbed & I got ready to belay.
I’m a little afraid of heights so I knew this wasn’t going to be easy. I like to push myself though, so I smiled & began climbing.

But I made it to the top!
I was really proud of us all, for trying something new & going all the way. We’ll definitely be going back & trying harder walls. Hatch is ready.
