African Lentil Burgers.

Katie & I did a lot of cooking together while I visited, which I loved. Among an array of delicious vegetarian dishes we enjoyed were these lentil burgers. I picked up NoMU african rub while at the market to bring back with me but couldn’t resist using it before coming home. We added the spice blend to these African Lentil Burgers & let me┬átell you, it’s amazing. The good news is you can make your own African rub at home adding equal parts of cumin, coriander, pimento, ajowan & cardamon spices. Trust me, you won’t regret it!

Ingredients (makes 8 large burgers)

1 cup Lentils, cooked

1 1/2 cups All-Purpose Flour

1 small white onion, chopped

1/2 red bell pepper, chopped

1/4 cup parsley, chopped

1/2 tablespoon garlic, minced

1/4 teaspoon salt

1/4 teaspoon pepper

1/2 tablespoon African rub

2 eggs

In a bowl combine all ingredients until fully integrated. Blend half of the mixture in your food processor or blender & combine with the remaining burger mixture. Spoon burgers on hot, oiled skillet & cook about 3 minutes on each side until brown.

Serve with your favorite burger toppings. I enjoyed mine with tomatoes, onion, perinaise & feta cheese — delicious!
