It’s Our Anniversary!

August 20, 2012 by Carolina

Guess what? Peas in a Blog turns two today! Two years ago Katie & I began to share recipes & fitness tips via emails & after a while decided we should create a blog to keep them all together — that’s how Peas in a Blog was born. Now, two years later, this blog has grown so much more than we could have imagined. We have people like you that read it, follow the Peas on Facebook, Twitter, Instagram & Pinterest, but most importantly, we’ve made great relationships through this blog, met new friends, have encouraged not only each other but many of you along the way & we’ve enjoyed every minute of it! Thank you so much for reading the Peas, we really appreciate it!

Looking back at the last two years we’ve posted a bit of everything so Katie & I have selected our fave 5 posts to share with you, check them out:

Carolina

ING NYC Marathon. I never thought I would run a marathon but I did, & it was as hard & challenge & exciting as I thought it would be. This is a memory I will never forget!

Sundried Artichoke Tortellini. A very simple recipe but truly a favorite: everytime I make it I taste a little bit of heaven. You guys seem to agree because I’ve gotten many comments/emails/mentions about how much you guys love this tortellini. If you haven’t made it you should go take care of that, you’re missing out!

Hiking the Capes. One of my dream destinations was South Africa & I finally got a chance to see this beautiful country last year! Not only did I get to see it, I got to see it with my best friend — how awesome is that? Katie & I loved every minute of Cape Town (she having a lot more time there since she lived there for many years). Though we did incredible things while I visited one of my faves was hiking the Cape of Good Hope, it was so beautiful!

Headstands & Life Lessons. I’ve been practicing yoga for a little over a year now & recently completed a 30 day yoga challenge that really changed my outlook on life. Yoga continues to teach me something new everyday!

Devils Food Cake. Who doesn’t love chocolate right? This cake was chocolate at it’s best, I’ve made it a few times since I shared the recipe with you & it never disappoints!

Raspberry Fudge Frozen Greek Yogurt. This is just from last week, but I still can’t get over how good it was. And I love that the list of ingredients is so short.

Blueberry Muffins. Another recent recipe, but one of my new favorites. Muffins are such a treat for an occasional breakfast or snack–especially when you’re running late like I am most mornings.

Climbing an Active Volcano. When we headed out on our 3-month camping trip last year, I had no idea I’d end up climbing an active volcano in the Congo of all places. It was definitely a challenge, but something I’m so glad we did! The view was breathtaking!

Tea at the Mount Nelson.  So, this is technically Carolina’s post–but it was one of my favorite parts about her Cape Town visit earlier this year. Thinking about this makes me laugh too, because we didn’t add the part about me leaving my lights on in the parking lot and the battery being dead when we came out. We were all in dresses and heals–so one of the managers at the hotel jumped the truck for us. It was very nice of him although he clearly wasn’t very happy about it, but wouldn’t take no for an answer–which made it awkwardly hilarious.

Crispy Eggplant Parm Hero Sandwiches. I’m a huge fan of Eggplant Parmesan, so these sandwiches are still one of our all time faves. So tasty.

Thanks again for reading our blog, we can’t wait to continue to share our adventures in vegetarian cuisine & fitness with you for another year!
