Here’s to Hoping!
May 13, 2011 by KatieI did my meal planning today. Meal planning has helped us with our budget and, really, our sanity. I love walking up to the fridge in the morning and I can see exactly what we’re having for dinner. If I need to, I can do prep in the morning (especially if there’s homemade bread, or something, involved).
Here’s the list for the week (I’m just including dinners–we usually wing lunch and breakfast):
Saturday: Lentil Tacos w/homemade tortillas.
Sunday: Spaghetti w/faux-meatballs and garlic bread (I’m going to make french bread for the first time. I’ll try this recipe).
Monday: Chickpea Burgers and Hasselback Potatoes
Tuesday: Butternut Ravioli
Wednesday: Stuffed Eggplant
Thursday: Pasta w/pesto and veggies
Friday: Homemade Pizza
I’ll post recipes and photos for my favs in the upcoming weeks.
On a side note, I’m REALLY excited for a garage sale in the morning. In South Africa, people don’t do the garage sale thing. But, a bunch of Americans are moving back to the States and having a yard sale. Do you think there’s any chance that someone will be selling Tootsie Rolls? They’re my favorite American candy and I’m totally out. Here’s to hoping!

I made my meal plan for this week today too. It was hard since Im trying to clean out the fridge for a big costco attack next week

Meal planning makes a HUGE difference, doesn’t it! It’s always nice after a big shopping trip, like Costco, because there are so many options in your pantry
