After an awesome Hip Hop Hustle class (I’m not in this video, but that’s my gym & my instructor Alli who’s AMAZING!) I was absolutely starving! Between the half marathon, traveling & oodles of homework I haven’t had time to go to the grocery store; I didn’t have much to work with in my kitchen. After a quick inspection of I my cupboard/fridge I discovered a packet of wheat spaghetti, balsamic vinegar, a tomato, an onion, garlic & vegan cheese — This can work! Here’s what I came up with…
NOTE: It’s great to always have the staples in your kitchen for moments like these when you need to throw something together. Everyone will have different staples based on their eating habits, for me the staples are: pasta, tomatoes, lettuce, onions, garlic, salad dressing & an array of seasonings. You can always use these ingredients as the base for your dishes so they never go to waste!
1/2 Pack of Spaghetti
1/2 White Onion, chopped
1 Tomato, chopped
1 TBS Garlic, chopped (I love the pre-chopped kind in the jar)
2 TBS Balsamic Vinegar (or more if you really like the taste)
1/2 TBS Oregano
1 TSP Oil, whatever your preference is
Salt & Pepper, to taste
Shredded Cheese, to taste
Fresh herbs, to taste, finely chopped
Start by making the pasta according to the package instructions; when the pasta is almost cooked go ahead & bring out a skillet. Heat the oil over high heat, add the garlic & onions, cook for 3-4 minutes until onion is translucent. Add the tomato, balsamic & seasonings, cook for 2-3 minutes. Go ahead & give it a taste, adjust the seasons accordingly. Feel free to add balsamic if you’re a huge fan.
Top pasta with sauce, shredded cheese & fresh herbs if you have them. I like adding salt & pepper once I top the dish with cheese, brings out the flavor (try salting your pizza, so good!). Buen provecho!
Shred Update: As previously mentioned, I’m currently doing the 30-Day Shred. I just completed day 10, moved to Level 2 of the workouts. So far I’ve lost 1/2 inch off my thighs & 1/2 inch off my waist. Not bad, not bad.
